Shirataki Noodles: The Low-Carb Konjac Alternative

Did you know there’s a noodle made from konjac? Before konjac solidifies, it's passed through thin holes and boiled, creating fine, string-like noodles. Known as shirataki, meaning "white waterfall," these noodles absorb flavors quickly, making them perfect for dishes like sukiyaki or salads.

There’s a growing trend of using shirataki noodles as a low-carb alternative for pasta, ramen, or udon. Shirataki is not only low in calories but also contains just 0.1g of carbohydrates per 100g, making it an ideal choice for those on a low-carb diet.

Many people cut down on rice when following a low-carb regimen, but this can result in a lack of fiber, leading to constipation. Shirataki noodles help fill this gap by supporting regular digestion while maintaining low-carb intake. When using shirataki in stir-fry dishes, dry-fry the noodles beforehand to remove excess moisture, allowing them to better absorb flavors.

However, overeating shirataki can lead to digestive issues such as constipation, diarrhea, or nausea. As with any diet, balance is crucial. It’s recommended to enjoy shirataki in moderation, no more than one meal a day.
